Here are a few of my favorite ways to use it.
1. Drop two ripe slices in a pitcher of water for a lightly flavored healthy twist on lemon water.
2. Mango salsa – Use as a topping on fish tacos (great way to hide the fish from your kids) or mix with grilled chicken sausage for a delicious and low-fat meal.
One ripe mango, chopped (Tips on how to peel a mango)
Two plum tomatoes, chopped
1/4 cup of chopped sweet vidalia onion
1 garlic clove chopped
a handful of chopped cilantro
Saute garlic and onion in 1 tblsp of olive or vegetable oil for 3-4 minutes. Do not brown. Add tomato, mango and simmer for about 5 minutes. Stir frequently. Add cilantro, salt and pepper to taste and simmer for 1-2 more minutes.
3. Mango Risotto – DO NOT BE AFRAID OF RISOTTO – it is easy! Just follow the directions on the package and stay focused. Use about 2 cups of dry risotto (or arborio rice) to feed your family.
Separately, make the above salsa, but double the recipe and add either sausage or shrimp after salsa is heated through. When risotto is finished, mix sauce and rice together. Spicy sausage is great because the sweet from the mango and the spicy from the meat make it a party in your mouth.
